Pumpkin Spice Waffles

IT’S THAT TIME OF YEAR AND I COULD NOT BE MORE EXCITED! Now if this weather would just make up its mind and stick to a nice cool temp that allows me to wear sweaters and over-the-knee boots I’ll be happy. So these waffles are the perfect fall breakfast and really easy to make.

Makes: 6 waffles Total time: 20 minutes

INGREDIENTS

  • 2 large eggs, room temperature

  • 1 1/2 cups buttermilk

  • 1/2 cup butter, melted and cooled

  • 1/2 teaspoon vanilla

  • 1/2 cup pumpkin puree

  • 1 3/4 cups flour

  • 1 1/2 teaspoon cinnamon

  • 1/2 teaspoon cloves

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon ginger

  • 1/3 cup sugar

  • 2 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • Whipped cream and maple syrup for topping

Step 1: In a large bowl, mix together the eggs, buttermilk, butter, vanilla and pumpkin puree.

Step 2: In a separate bowl, whisk together the flour, cinnamon, cloves, nutmeg, ginger, sugar, baking powder, baking soda and salt.

Step 3: Pour the dry ingredients into the wet ingredients and fold together until just combined.

Step 4: Using a waffle iron, ladle in 2/3 cup batter and cook following instructions on your waffle maker.

Step 5: Top with fresh whipped cream and maple syrup. Enjoy!
