Baked Avocado Eggs

Easy, delicious, quick, healthy. What else do you need in a breakfast?


Makes: 2 servings Total Time: 20 minutes


  • 1 avocado, sliced in half

  • 2 eggs

  • 1 slice of turkey bacon

  • Pinch of salt and pepper

  • 1/2 teaspoon chopped parsley

Step 1: Preheat the oven to 425 degrees and line a baking sheet with tinfoil. Scoop out approximately 2 tablespoons of avocado from the center of each half to provide enough room for a full egg.

Step 2: Place each avocado half on the lined baking sheet and crack each egg carefully into each half of the avocado. Bake for 18 minutes so the egg white is no longer transparent and the yolk is still runny.

Step 3: While avocados are baking, dice the slice of bacon into small pieces and cook in a small saucepan over medium heat until crispy.

Step 4: Once eggs are baked, remove from oven and sprinkle salt, pepper, bacon crumble and parsley on top. Serve immediately.
