Caramel + Cheddar Popcorn Mix Marshmallow Pops

There’s actually nothing I love more than Rice Krispies treats, but they can be made with any type of cereal or even popcorn. I tested out a recipe swapping out the Rice Krispies cereal with chopped cheddar and caramel popcorn (aka Chicago Mix) and oh my lord is it delicious.

Makes: 12 pops Total Time: 30 minutes

INGREDIENTS

  • 4 cups mini marshmallows

  • 4 tbsp butter

  • 2 cups chopped Smartfood Caramel & Cheddar Mix

  • 1 1/2 cups melting chocolate (milk, dark or white, your choice!)

 INSTRUCTIONS

  1. Over low heat, melt the butter and marshmallows in a saucepan.

  2. Once melted, mix in the chopped popcorn mixture.

  3. In 30 second increments, melt the chocolate of your choice in the microwave, stirring in between.

  4. Once smooth, line the bottom and sides of the silicone pop molds with the chocolate and place in the freezer to set for 5 minutes.

  5. Remove from the freezer, and fill eat mold with the popcorn marshmallow mixture.

  6. Cover each pop with another layer of chocolate and place back in the freezer for 10 minutes.

  7. Remove from the freezer and remove from the molds. Decorate with melted chocolate, sprinkles and popcorn.
