Turkey Bacon Wrapped Green Beans

Makes: 10          Prep time: 25 minutes          Bake time: 15 minutes           Total time: 40 minutes

INGREDIENTS

  • 20 oz french string beans
  • 2 garlic cloves, minced
  • 4 tablespoons of unsalted butter
  • 2 tablespoons lemon juice
  • Salt and pepper for seasoning
  • 5 pieces of turkey bacon, cut in half
  • 2 tablespoons brown sugar
  • toothpicks

Step 1: Preheat the oven to 350 degrees. In a saucepan, melt 2 tablespoons of butter and the brown sugar. Whisk until melted, then pour over turkey bacon to marinate. Set aside

Step 2: Bring water to a boil in a pot over medium heat and add in a pinch of salt and green beans. Let simmer for 5 minutes, then drain.

Step 3: In a saucepan over medium heat, melt 2 tablespoons of butter and garlic for 1 minute, then add in the green beans. Stir to coat with butter garlic mixture, then let simmer for 5 minutes, stirring occasionally. 

Step 4: Pour lemon juice over the beans and season with salt and pepper, then turn off the heat to let them cool.

Step 5: Once cool enough to handle, one at a time, take a bunch of green beans (approx. 7) and lay them in the middle of a slice of bacon. Wrap the bacon around the beans and secure with a toothpick. Transfer to a baking sheet lined with parchment paper

Step 6: Bake for 18 minutes, then serve immediately or store in the fridge in an air tight container for up to 3 days
